Mexico is known for its diverse and authentic desserts, and Chongos Zamoranos holds a special place among them. This treat, originating from the state of Michoacán, has been prepared for centuries using simple ingredients such as milk, sugar, cinnamon, and rennet. Although humble, these ingredients create a delicacy rich in flavor and unique in texture.

How did Chongos Zamoranos originate?

Legend has it that this dessert was accidentally discovered by nuns during the colonial period as they sought ways to preserve milk for longer periods. By using rennet, they created milk curds, which, when combined with sugar and cinnamon, became a sweet treat that quickly gained popularity across Mexico. Today, Chongos Zamoranos is a favorite in many households and is commonly served in traditional restaurants.

Recipe for Chongos Zamoranos

If you’d like to try this dessert at home, the preparation is simple and requires only a few ingredients.

Ingredients:

  • 1 liter of whole milk

  • 100 g of sugar

  • 1 cinnamon stick

  • 1/4 teaspoon of rennet dissolved in 1/4 cup of water

  • A pinch of salt

Preparation:

  1. Heating the Milk
    Pour the milk into a large pot and add the cinnamon stick. Heat over medium heat until warm, but be careful not to bring it to a boil.

  2. Adding the Rennet
    In a separate bowl, dissolve the rennet in water, then pour it into the milk and stir gently. Let the mixture sit for 10-15 minutes until the milk thickens and starts separating into curds and whey.

  3. Cooking with Sugar
    Once curds have formed, remove the cinnamon stick, add the sugar and a pinch of salt, and stir gently until dissolved. Cook on low heat for about 25-30 minutes, allowing the curds to soften and the syrup to thicken.

  4. Cooling and Serving
    Remove from heat and let it cool. You can serve it warm or fully chilled, with extra syrup from the pot.
