Francesco Martucci makes the best pizza in the world. The owner of “Pizzeria I Masanielli” in Caserta has topped the list of the best places to eat pizza in 2022, according to the online guide “50 Top Pizza”.
This recognition does not surprise gourmet pizza lovers who have been coming to Caserta for years to enjoy Martucci’s masterful creations, which according to many go beyond the traditional Italian recipe.
The pizza dough at I Masaniella is very soft, light and airy, and the toppings are very creative and have a balanced taste. The pizzas usually contain high-quality ingredients that are grown locally or produced from local raw materials, such as anchovies from Trapani, olives from Caiazza, capers from Salina and the like.
Baked tomato cream is placed on the dough and combined with different types of cheeses – from buffalo burrata to soft Fior di Latte, but also homemade sausages or ham from the domestic Pelatelo Teanese black pig.
There are about 20 pizzas on the menu, but behind even the simplest flavors lies an amazing gastronomic creation. The Marinara Atomica pizza, for example, features a sauce made from San Marzano tomatoes that are cooked for 12 hours before being placed on the dough. The pizza is accompanied by dried pienollo tomatoes from Vesuvius, crispy tomato skin, tomato mayonnaise, mountain oregano, garlic from the Ufita Valley and homemade olive oil.
Vegans will also find something for themselves here. The vegan pizza combines roasted and fresh tomatoes mixed with brown sugar, mint, green leafy vegetables, beets, cauliflower mayonnaise, crispy capers and extra virgin olive oil.
Equal attention is paid to food, but also to thermal processing. Some pizzas at I Masaniella are thermally processed three times: they are steamed (al vapore) at 100 degrees Celsius, fried (fritto) at 180 degrees Celsius and baked (al forno) in the oven at 400 degrees Celsius.
Although Francesco Martucci’s pizzas are known as the best in the world, the price is very affordable, and depending on which one you choose, it will cost you from 6 to 14 euros. Due to the high demand, there are days when I Massanieli makes more than 1000 pizzas a day.
